Pita with cevapcici and fresh cucumber salad

This delicious vegan pita with cevapcici from Upside is the perfect easy meal. In no time at all, a nutritious and surprising meal is served. Adding a fresh salad to the Upside cevapcici creates a delicious mix of flavors. By the way, you can also add bell bell pepper, tomato or carrot to this dish!


Balkan mince-rolls or ćevapčići is a dish known throughout the Balkans. It originally consists of rolled sausages made of minced meat. Upside's cevapcici is made of wheat and lupine combined with vegetables and spices.


Ingredients

  • Cevapcici from Upside

  • Pita buns

  • Iceberg lettuce

  • Red onion

  • Cucumber

  • 3 tablespoons vegan yogurt

  • 1 teaspoon vinegar

  • 1/2 teaspoon sugar

  • 1 teaspoon dill

  • Pinch of salt


Preparation

  1. For the salad, peel the red onion and cut it into very thin half rings. This can be done with a mandolin or a sharp knife. Wash the cucumber and cut into thin slices. For the dressing, mix together the yogurt, vinegar, sugar and dill. Add salt to taste. Spoon the dressing over the onion and cucumber.

  2. Toast the pita buns in the oven or in a toaster. Bake your cevapcici. You can cut these into cubes or strips.

  3. Cut the pita buns open and top with the salad, cevapcici and lettuce.
